Handcrafted pastries baked overnight, every day6015 Phinney Ave., N Seattle, WA

Fresh Flours Bakery is known for hand-rolled croissants and pastries made from scratch, blending Japanese-inspired flavors with French pastry craft. Keiji and Etsuko founded the bakery in 2005, and it now bakes overnight, 362 days a year, and also serves breakfast sandwiches, wraps and specialty coffee. Onda Origins acquired the bakery in 2021 and it remains a neighborhood bakery across four Seattle shops.
Customers can order online for same-day pickup at each location, or come in early to fill a large pastry box with whatever is available. The bakery does not take catering or large orders, since its small team bakes for all its shops every day. Select gluten-free items are offered, though availability varies by location, and gift cards can be bought in store. The Phinney Ridge shop is one of the four, and the sister roastery Onda Origins is in Hillman City.
