Redlands Oyster Cult serves raw and grilled oysters alongside a menu built around seafood, from chilled jumbo scallops and aguachile to clam stew and crab cakes. The kitchen also cooks Chilean sea bass, steak frites and a mushroom polenta, and the cocktail list leans toward mezcal, tequila and house-made drinks with names like Sea Hag and Retrograde.

The restaurant is open Wednesday through Saturday evenings, and it does not take reservations. Beer is offered by the bottle, with a short list of imports and craft labels, and the bar keeps a library of wine and spirits. Find it on East State Street in Redlands.
