Le Testimony Organic Bistro

Le Testimony Organic Bistro is a small-batch brunch spot serving organic crepes, farm-fresh omelettes, seasonal salads and soups, and real fruit ice cream. James' signature crepes come in sweet and savory versions, and the menu changes daily with what is fresh. Organic coffee, matcha and chai are also served, along with seasonal drinks through June. The kitchen uses pasture-raised eggs, A2 dairy and cold-pressed olive and coconut oil, and avoids seed oils and MSG.

The bistro is open Tuesday through Friday from 9 AM to 3 PM, with last orders at 2:45 PM or when the day's food sells out, so arriving early helps. Orders are placed at a self-serve kiosk or online, and walk-ins are welcome without reservations. The kitchen is shared and not recommended for severe allergies, and gluten-free crepe batter is currently unavailable. The bistro is at 3365 Placer Street in Redding.
