Compadre Cookers Tex-Mex BBQ smokes prime brisket, ribs, sausage and turkey breast, then pairs them with Mexican-style dishes such as brisket tacos, brisket enchiladas and bacon-wrapped poppers stuffed with brisket. The kitchen has placed in Houston Livestock Show and Rodeo cook-offs, and its ribs are described as award winning. Whole briskets and racks of ribs can also be pre-ordered for families who want to cook at home.

Lunch runs Thursday through Saturday until sellout, and the team often serves from its food truck, with a downtown Rosenberg restaurant listed as coming soon. Catering and private events can be booked any day of the week, from weddings and galas to birthday parties, and the crew can bring the food trailer or set up a table. The business also works with schools on open houses and fundraisers, giving 10% of profits back to the school.
