The Butchery is a meat and specialty food shop that sells cuts sourced from farms and ranches, along with artisan ingredients for home cooks and professional chefs. The founders, Brian Smith and Robert Hagopian, opened the first shop in Costa Mesa in 2014 after finding that neighborhood butcher shops had largely given way to prepackaged meat in big-box grocers. Its butchers are trained in the traditional way and can recommend cuts for a particular meal.
The Costa Mesa shop on East 17th Street is open daily from 9 AM to 8 PM, and orders can be placed online for pickup from the kitchen. The company also runs locations in Newport Coast, San Diego and Manhattan Beach, and gift cards are available.
