Dutchman's Wood-Fired Bagels

Dutchman's Wood-Fired Bagels makes hand-shaped bagels that are honey boiled and baked in a wood-fired pizza oven, with a crispy outside and chewy inside. The bagels come plain, sesame, za'atar, roasted garlic and herb, and in a rotating bagel of the day, and they are served with a range of cream cheeses and spreads. The menu also includes bagel sandwiches such as the Garden State with cucumbers, heirloom tomatoes and capers, along with espresso drinks, cold brew and juices. The shop started in November 2022 as a pop-up in a pizzeria's cafe space before becoming permanent.

Dutchman's is located at Fort Andross in the historic Cabot Mill on Maine Street in Brunswick. You can stop in or order ahead online for pickup, and gift cards are available. The shop also rents its space in the mill for events, which suits people planning a gathering with a historic setting.
