Wood-fired Neapolitan pizza baked at 900 degrees in three minutes407 N 5th Ave, Ann Arbor, MI

PizzaPazza makes Neapolitan-style pizza in a wood-fired oven that bakes each pie at about 900 degrees in roughly three minutes. The dough is poolish-fermented with King Arthur flour, and the menu stays short, with Margherita, Funghi, Pepperoni and a white Prosciutto di Parma pie among the house specialties. Chop salads, herb cheese bread and a few specials round out the menu.
The business started as a wood-fired food truck and now operates from a permanent spot inside Kerrytown Market in Ann Arbor. Takeout and delivery are both available, and online ordering runs through the website and app, which also has a rewards program for points toward free food. The same oven travels to weddings, grad parties and corporate events, and the truck can bake up to 100 pies an hour. Gift cards are sold too.
