Specialty-grade coffee roasted in Albuquerque1208 Rio Grande Blvd, NW Albuquerque, NM

Cutbow Coffee roasts specialty-grade coffees in Albuquerque, combining proprietary blends with single-origin offerings. Paul Gallegos, who began as a professional coffee roaster with Peet's Coffee in the late 1980s before returning to New Mexico, guides the roasting, and each batch is taste-tested to keep results consistent. Visitors can drink the coffee at the coffee bar or sample it in the tasting room, and bags are available to take home.
The roastery sits just north of Historic Old Town, and the name comes from the cutbow trout, in honor of Paul's late father, an avid fisherman of northern New Mexico waters. A portion of proceeds from every bag sold goes to the Hermit's Peak Watershed Alliance. Coffee can also be ordered online through the shop. The shop is open Tuesday through Friday from 7:30 to 3:00 and Saturday and Sunday from 8:00 to 3:00, and it is closed Mondays.
