The story

Revolution Bakery makes 100% gluten-free breads, pastries and celebration cakes. Its menu includes ancient-grain sourdough boules, gluten-free donuts and morning buns, and the pastry case rotates daily. Everything is baked fresh in small batches each morning in a dedicated gluten-free kitchen, which suits people with celiac disease.

The Santa Fe shop is inside the Shops at the Design Center on Cerrillos Road and is open Wednesday through Saturday, 9 to 2. Because the daily menu often sells out, it helps to call ahead to see what is available and to place an order. Custom cakes can also be ordered online. A second shop in Albuquerque on Bellamah Avenue keeps its own hours.
