Proof & Gather Baking Company

Proof & Gather is an artisan bakery that bakes naturally leavened sourdough loaves, baguettes, focaccia, brioche and English muffins, along with cookies, scones, cinnamon rolls and rotating seasonal desserts. The menu also includes rustic sourdough pizzas, breakfast sandwiches and a coffee bar with espresso drinks and matcha. Vegan and gluten-free cookie options are listed, and custom orders for specialty bakes can be requested by email.

The main shop is in the Tin City area at 3075 Limestone Way in Paso Robles, open Tuesday through Sunday mornings and early afternoons, and closed on Mondays. The bakery also sells at the SLO Farmer's Market on Thursday evenings, the Paso Robles Farmers Market on Tuesday mornings, and the Atascadero Farmers Market on Wednesday afternoons. Orders can also be delivered through Harvestly and SLO VEG.
