Rubio’s Coastal Grill

Rubio's Encinitas is a fast-casual Baja-inspired Mexican restaurant known for its fish tacos, which the chain says it has sold more than 270 million of since it opened as a walk-up taco stand in Mission Bay in 1983. The menu also includes burritos, bowls and salads, with fish and shrimp sourced from certified sustainable fisheries.

The Encinitas location sits in the El Camino Promenade shopping center at 252 N. El Camino Real. Guests can order online or through the app, and the kitchen makes its beans, guacamole and salsas in-house each day. The restaurant uses compostable to-go containers and rPET salad bowls.
