Cacao Chemistry is a Colorado Springs chocolatier and bakery known for handcrafted truffles, bonbons, artisan chocolate bars, brownies, brittle and bark. Its chocolate is made in small batches with Valrhona and República del Cacao couverture, and the shop also sells gift cards, hot chocolate, tea and coffee, and a chocolate cake that regulars mention by name. The company was founded in 2014 by Executive Pastry Chef Sam Lang and Travis Ashing.
The downtown shop at 109 N Tejon St has been open since 2016 and carries work from local artists. Orders can be placed online or in the shop, and customers have picked up custom orders on short notice. The shop is closed Mondays, with some exceptions, and runs later hours on Friday and Saturday.
