El Pollo Riko serves Latin fusion food drawing on Cuban, Mexican and Central American flavors, built around citrus-marinated chicken cooked over mesquite and charcoal. The seasoning is the work of founder Chris "Toby" Rodriguez, who also opened Ay Papa' Que Rico in Van Nuys in 2009 and brings the same cooking to both restaurants.
Orders can be picked up or delivered, and the restaurant also takes event catering orders. The founder's guarantee is simple: if you don't like the food, it's free. The restaurant is on California Avenue in Bakersfield.
